Honey Glazed Peach Cobbler

Ingredients
- 6 large ripe peaches, peeled and sliced
- 1/2 cup sugar
- 2 tbsp local honey
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 cup sugar
- 1 cup milk
- 1 tbsp baking powder
- Pinch of salt
Instructions
- 1Preheat oven to 350°F.
- 2Toss peaches with 1/2 cup sugar, honey, lemon juice, vanilla, cinnamon, and nutmeg.
- 3Melt butter in a 9x13 baking dish in the oven.
- 4Whisk together flour, 1 cup sugar, milk, baking powder, and salt.
- 5Pour batter over melted butter — do not stir.
- 6Spoon peach mixture over batter — do not stir.
- 7Bake 40-45 minutes until golden and bubbly.
- 8Let cool 10 minutes before serving.
- 9Serve warm with vanilla ice cream or whipped cream.
Notes
This cobbler is best with fresh summer peaches, but canned peaches (drained) work in a pinch during winter months. Drizzle extra honey on top before serving for a beautiful presentation.
