Ingredients

  • 6 large ripe peaches, peeled and sliced
  • 1/2 cup sugar
  • 2 tbsp local honey
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 cup milk
  • 1 tbsp baking powder
  • Pinch of salt

Instructions

  1. 1Preheat oven to 350°F.
  2. 2Toss peaches with 1/2 cup sugar, honey, lemon juice, vanilla, cinnamon, and nutmeg.
  3. 3Melt butter in a 9x13 baking dish in the oven.
  4. 4Whisk together flour, 1 cup sugar, milk, baking powder, and salt.
  5. 5Pour batter over melted butter — do not stir.
  6. 6Spoon peach mixture over batter — do not stir.
  7. 7Bake 40-45 minutes until golden and bubbly.
  8. 8Let cool 10 minutes before serving.
  9. 9Serve warm with vanilla ice cream or whipped cream.

Notes

This cobbler is best with fresh summer peaches, but canned peaches (drained) work in a pinch during winter months. Drizzle extra honey on top before serving for a beautiful presentation.
