Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 6 tbsp cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 tbsp honey

Instructions

  1. 1Preheat oven to 450°F and line a baking sheet with parchment.
  2. 2Whisk together flour, baking powder, salt, and baking soda.
  3. 3Cut in cold butter until mixture resembles coarse crumbs.
  4. 4Make a well and pour in buttermilk and honey.
  5. 5Stir gently until just combined — do not overwork.
  6. 6Turn dough onto floured surface and pat to 1-inch thick.
  7. 7Cut with a 2.5-inch biscuit cutter — press straight down, do not twist.
  8. 8Place on baking sheet with sides touching.
  9. 9Brush tops with a little extra buttermilk.
  10. 10Bake 10-12 minutes until golden on top.

Notes

The secret is keeping everything cold — butter, buttermilk, even your hands. For extra flaky layers, fold the dough in half twice before cutting.
