Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/4 tsp baking soda
- 6 tbsp cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 tbsp honey
Instructions
- 1Preheat oven to 450°F and line a baking sheet with parchment.
- 2Whisk together flour, baking powder, salt, and baking soda.
- 3Cut in cold butter until mixture resembles coarse crumbs.
- 4Make a well and pour in buttermilk and honey.
- 5Stir gently until just combined — do not overwork.
- 6Turn dough onto floured surface and pat to 1-inch thick.
- 7Cut with a 2.5-inch biscuit cutter — press straight down, do not twist.
- 8Place on baking sheet with sides touching.
- 9Brush tops with a little extra buttermilk.
- 10Bake 10-12 minutes until golden on top.
Notes
The secret is keeping everything cold — butter, buttermilk, even your hands. For extra flaky layers, fold the dough in half twice before cutting.
